Compound Butter (thyme and lemon)

Compound butter

2 sticks salted butter room temperature

1 cup fresh thyme leaves

4 garlic cloves

1 tsp. fresh rosemary

1/2 tsp scotch bonnet pepper

1 table spoon lemon zest

4 table spoon olive oil

  • In a mixer whisk the butter until its light and fluffy and pale in color (almost white)
  • In a blender or food processor, combine the thyme, garlic, oil , lemon zest , pepper and rosemary and blend until the herbs are very fine and have been infused into the oil
  • Mix the herb oil mixture into the light and fluffy butter
  • Pour onto a long piece of wax paper or plastic wrap and roll into a cylindrical shape
  • Once you have rolled it over a few times twist and tie the ends and refrigerate so the butter can harden
  • Once it’s hard its ready for use.
