Holiday Cocoa Cookies

The perfect cookie for the holidays is warm and gooey. It takes a little bit of effort and requires that homemade touch. This recipe takes me back to the amazing cookies my grandma always had fresh out of the oven when we would arrive Christmas Eve! Here is a tasty holiday recipe to share with friends and family.
The total prep/cook time is 35 minutes. Let’s get baking!
Ingredients:
½ cup of unsalted butter, softened to room temperature
½ cup of granulated sugar
½ packed brown sugar
1 egg
1 teaspoon vanilla extract
½ teaspoon of baking soda
1 teaspoon of hot water
¼ teaspoon of salt
1 ¼ cups of all purpose flour
½ cup of unsweetened cocoa powder
¼ teaspoon of cinnamon
1 cup of semisweet chocolate chips
10-11 large marshmallows cut in half
*Optional* shaved chocolate for topping off the marshmallows
Directions:
Preheat the oven to 350℉ and line a baking sheets with parchment paper.
Using a stand mixer or a hand mixer cream the butter, white sugar and brown sugar.
Beat in the egg and vanilla extract into your mixture.
In a small cup, combine the hot water and baking soda until it is dissolved completely, then beat into the wet mixture.
In a separate bowl combine flour, cocoa powder, salt and cinnamon.
Beat the dry ingredients into the wet ingredients ½ cup at a time.
Stir in chocolate chips.
Refrigerate the dough for at least 15 minutes.
Form into 20-22 2 inch balls and place on the baking sheets 2 inches apart.
Bake for 8 minutes. Leaving the oven on, take out the cookies and press the halved marshmallows onto the top of each cookie. Place back into the oven for another 2-3 minutes until slightly melted.
Transfer the cookies to a cooling rack and sprinkle with shaved chocolate.

The cookie itself was delicious! I would recommend this recipe if you like chocolate! You may need a cup of milk with this one!
Personally, I loved these cookies. The fluffy marshmallows on top were the perfect addition to the chocolate cookies!
