Ingredients
1 cup raw cashews
Water
2 tablespoons nutritional yeast
2 tablespoons water
2 tablespoons lemon juice
1 teaspoon raw apple cider vinegar
1 clove of garlic
1/2 teaspoon sea salt
1/2 teaspoon cracked pepper
1 tablespoon chopped chives
1 tablespoon fresh thyme leaves
1 tablespoon fresh chopped basil
Directions
Soak the raw cashews in water overnight.
Drain the cashews and add them into a food processor with all the ingredients listed above EXCEPT the jam.
Turn the food processor on and allow it to process for 4 minutes.
Transfer the mixture to a square piece of cheesecloth and tie it closed with twine.
Wrap the twine around a spoon and suspend the "cheese bag" in a bowl. Refrigerate overnight.
After refrigeration unwrap the cheese and serve!
Refrigerate any leftover cheese.
Serve it with your favorite jam and your choice of crackers, toasts, or plantain chips!
