Ingredients
4 cups fresh seedless watermelon, cut into bite-size pieces
1 cup tomatillos, cut in bite size pieces*
1 diced English cucumber
1 cup fresh blueberries (other seasonal berries may be substituted)
1 small, chopped red onion
1/4 cup TAO Basil Pressato Olive Oil
1/4 cup TAO Rosé Balsamic Vinegar
1/4 teaspoon Himalayan pink salt black pepper blend, to taste
1 tablespoon minced fresh basil to garnish
Directions
Combine all ingredients in a large bowl; mix well with a slotted spoon to blend flavors. Taste and adjust seasoning as necessary. Cover and refrigerate for 30 minutes.
Transfer to serving bowls and garnish with freshly chopped basil. This is the perfect summer salad to pair with grilled seafood, meat, or chicken.
*About 4 tomatillos, husked and rinsed.
