Ingredients
3 medium Gala apples, peeled and grated
1/4 cup orange juice
2 cups all-purpose flour
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup granulated sugar
1/2 cup TAO Extra Virgin Olive Oil
2 large eggs
1/2 cup gold raisins
Confectioner's sugar, for dusting
Directions
Preheat the oven to 350°F.
In a large mixing bowl, combine the grated Gala apples and orange juice. Mix well to combine.
In a separate mixing bowl, whisk together the all-purpose flour, ground cinnamon, ground nutmeg, baking powder, and baking soda.
Add the granulated sugar, extra virgin olive oil, and eggs to the bowl with the grated apples. Mix well to combine.
Gradually stir in the dry ingredients to the bowl with the wet ingredients, mixing until just combined.
Stir in the gold raisins.
Grease a 9-inch round cake pan with non-stick cooking spray.
Pour the apple cake batter into the prepared cake pan and spread it out evenly.
Bake the apple cake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Allow the cake to cool in the pan for 10 minutes before removing it to a wire rack to cool completely.
Once the apple cake is cool, dust it with confectioner's sugar before serving.
Serve the apple cake as is, or with a dollop of whipped cream or a scoop of vanilla ice cream.
