Dried Apricot & Cherry Mostarda is a sweet and tangy condiment that combines dried apricots, dried cherries, mustard, and vinegar. Ingredients
1/4 pound dried apricots, cut into 1/4-inch pieces
1/4 cup dried cherries, coarsely chopped
1 shallot, minced
1 1/2 teaspoons minced crystallized ginger
1/2 cup dry white wine
3 tablespoons white wine vinegar
3 tablespoons TAO Cranberry Pear Balsamic Vinegar
3 tablespoons sugar
1 teaspoon dry mustard
1 teaspoon Edmond Fallot or other quality Dijon mustard
1 tablespoon unsalted butter
Directions
Combine apricots, cherries, shallot, ginger, wine, vinegar, cranberry pear balsamic vinegar, and sugar in a small saucepan and bring to a boil.
Reduce heat and simmer, covered, until the fruit is softened and the liquid is absorbed, around 10 minutes.
Stir in dry mustard, Dijon mustard, and butter, then continue to simmer until the mixture reaches a jam-like consistency, for an additional 2-3 minutes.
Serve warm or at room temperature.
