Ingredients
1 cup of all-purpose flour
1/2 cup of finely ground pecans
1/4 cup of sugar
1/4 teaspoon of salt
1/2 cup of TAO Olive Oil (e.g. Extra Virgin, Lemon Pressato, or Orange Pressato)
1/2 teaspoon of pure vanilla extract
Additional sugar for coating (optional)
Directions
Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
In a medium-sized bowl, mix together the flour, ground pecans, sugar, and salt.
In a separate bowl, combine the olive oil and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. This will be a crumbly dough, but it should hold together when pressed.
Roll the dough into 1-inch balls and place them on the prepared baking sheet.
Bake for about 20 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. If desired, while they're still warm, roll the cookies in additional sugar for a sweet coating.
