Ingredients
6 hard-boiled eggs, peeled and chopped
1/4 cup mayonnaise
2 tablespoons TAO Lemon Cucumber Balsamic Vinegar
1/4 cup Italian parsley
1/4 cup chopped red onion
Zest of 1 lemon
Salt and pepper to taste
Directions
In a large mixing bowl, combine the chopped eggs, mayonnaise, Lemon Cucumber Balsamic Vinegar, and chopped herbs.
Stir the mixture until all ingredients are well combined.
Season the egg salad with salt and pepper to taste.
Serve on a bed of greens, in a sandwich, or as a dip with crackers and veggies.
