Ingredients
1 pineapple, peeled, cored, and sliced
1/2 red onion, chopped
2 large mangos, peeled and chopped
1 Roma tomato, chopped
1/2 cup chopped fresh cilantro
1/2 tablespoon TAO Red Cayenne Pressato OO
3/4 teaspoon salt
1/2 tablespoon TAO Mango Puréevino
1 teaspoon lime zest
2 tablespoons fresh lime juice
Directions
Preheat the grill to medium-high heat (350°F to 400°F).
Grill pineapple and onion for 5 minutes or until well-marked but not cooked. Chop the pineapple and onion and place them in a large bowl.
Whisk together the Chipotle Oil and Mango Puréevino in a separate bowl. Toss in mangos, pineapple, and remaining ingredients. Cover and chill.
Serve over fish or chicken.
