Ingredients
8 ounces. of your favorite pasta
1/4 cup of TAO Lemon Cucumber Balsamic Vinegar
1/4 cup of TAO Extra Virgin Olive Oil
2 cloves of garlic, minced
1 lemon, zested and juiced
1 cucumber, diced
1/2 cup of cherry tomatoes, halved
1/4 cup of red onion, diced
1/4 cup of Kalamata olives, chopped
Salt and pepper to taste
Crumbled feta cheese or grated Parmesan cheese for serving
Directions
Cook the pasta according to the package instructions until al dente.
Whisk together the lemon cucumber balsamic vinegar, olive oil, minced garlic, lemon juice, salt, and pepper in a small bowl.
Drain the cooked pasta and transfer it to a large bowl.
Add the diced cucumber, halved cherry tomatoes, diced red onion, and chopped Kalamata olives to the bowl with the pasta.
Pour the dressing over the pasta and toss everything together until the pasta is coated evenly.
Serve the pasta hot or cold, topped with crumbled feta cheese or grated Parmesan cheese.
Note: You can also add grilled chicken or shrimp to make this recipe a complete meal. Additionally, fresh herbs like basil or parsley would also make a nice addition to this pasta dish.
