Ingredients
For the dressing:
2 tablespoons TAO Honey Ginger Balsamic Vinegar
2 tablespoons TAO Lime Pressato Olive Oil
1 tablespoon honey
1 tablespoon grated fresh ginger
1 tablespoon Bourbon Barrel Bluegrass Soy Sauce
1/4 teaspoon red pepper flakes
For the salad:
1 large honeydew melon, seeded and cut into bite-sized pieces
1/2 cup roasted peanuts, chopped
1/2 cup fresh cilantro leaves, chopped
1/4 cup red onion, thinly sliced
Directions
In a small bowl, whisk together the Honey Ginger Balsamic Vinegar, olive oil, honey, grated fresh ginger, soy sauce, and red pepper flakes to make the dressing.
In a large mixing bowl, combine the honeydew melon pieces, chopped roasted peanuts, fresh cilantro leaves, and thinly sliced red onion.
Drizzle the ginger dressing over the top of the salad and toss to coat evenly.
Serve the honeydew salad with ginger dressing and peanuts immediately.
