Ingredients
2 cups mashed potatoes
1/2 cup shredded parmesan cheese
1/4 cup all-purpose flour
2 cloves garlic, minced
1/4 cup chopped scallions
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons TAO Olive Oil (e.g. Extra Virgin, Garlic Infused, or Butter Infused)
Directions:
In a large bowl, combine the mashed potatoes, shredded cheddar cheese, all-purpose flour, minced garlic, chopped scallions, salt, and black pepper. Mix well to combine.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Using a cookie scoop or spoon, scoop the potato mixture into small rounds and place them in the hot oil.
Fry the fritters for 2-3 minutes on each side, until golden brown and crispy.
Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb any excess oil.
Serve the Cheesy Garlic Mashed Potato Fritters hot as an appetizer or side dish.
