5lb Bone-In Pork Butt
Pork Cooking Liquid and Ingredients
2 Cup Orange Juice
2 Tablespoons Bourbon Barrel Bluegrass Soy Sauce
1 1/2 cup bone broth
1 Yellow Onion cut in half
1 full garlic bulb (cut in half - skin on)
2 inch piece of ginger (cut in half - peel can stay on)
1 bird’s eye chili
Quick Cucumber Pickle Ingredients
3 mini cucumbers - sliced into ribbons with peeler
1/2 teaspoon Salt
2 tsp Sugar
1/4 cup Rice Wine Vinegar
Brioche Buns
Spicy Mayo
Cilantro
Directions
Preheat the oven to 300 degrees Fahrenheit.
In a mixing bowl, combine chicken stock, orange juice, and soy sauce.
Prepare the quick cucumber pickle by peeling the cucumber into ribbon pieces with a vegetable peeler. Place the cucumber ribbons into a small mixing bowl and sprinkle with sugar and salt. Allow the cucumber to sit for 15 minutes to release some of the water. Drain the water from the cucumber using a colander without rinsing. Return the cucumber ribbons to the small mixing bowl, add rice wine vinegar, and let soak in the refrigerator.
Season the pork with salt. In a large skillet over medium-high heat, sear the pork on all sides until browned.
Transfer the pork to a roasting dish and pour the orange juice/chicken stock mixture into the dish. Add onion, garlic, ginger, and chili to the dish.
Cover the roasting dish with aluminum foil and slow-roast the pork for approximately 6 hours. Baste the pork occasionally while cooking and adjust the cooking times depending on the size of the pork.
After cooking, remove the pork from the oven and shred it into large pieces. Mix the shredded pork with Wozz! Korean Raspberry Gochujang BBQ Sauce until the pork is evenly coated. Use almost a whole bottle for a 5-pound roast or use half a bottle if using less pork. Serve any additional sauce on the side.
Toast the brioche buns in the broiler or on the grill to your desired level.
Assemble the sandwiches by placing the shredded pork on the bottom bun, adding cucumber pickle and cilantro, and topping with mayo on the top bun.
