Ingredients
2 tablespoons tomato paste
4 garlic cloves, minced
1 teaspoon ground coriander
1 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes
1 head of green or savoy cabbage, cored and thinly sliced
3 tablespoons TAO Extra Virgin, Infused, or Pressato Olive Oil
1 teaspoon Kosher salt
1/4 cup chopped fresh dill, parsley, or cilantro
Full-fat Greek yogurt or sour cream, for serving
Directions
In a small bowl, whisk together the tomato paste, garlic, coriander, cumin, and red pepper flakes.
In a large skillet or wok, heat the olive oil over medium-high heat.
Add the sliced cabbage and cook for 2-3 minutes or until the cabbage is wilted and beginning to brown.
Reduce the heat to medium and add the spice mixture to the skillet, stirring to coat the cabbage.
Cook the cabbage for an additional 10-15 minutes, stirring occasionally, until the cabbage is tender and caramelized.
Remove the skillet from the heat and sprinkle the chopped herbs over the cabbage.
Serve the caramelized cabbage hot with a dollop of Greek yogurt or sour cream on top.
