Ingredients
Cake:
3 eggs
1 1/8 cup brown sugar
1/4 cup maple syrup
2 1/2 teaspoon baking powder
1/3 cup mayonnaise
1/8 cup TAO Extra Virgin Olive Oil
1/3 cup Greek yogurt
1/4 cup almond butter
Peels of one grapefruit chopped
Pinch salt
Glaze:
Juice of one grapefruit
Enough powdered sugar to make “creamy” or opaque
Directions
Cake:
Preheat oven to 350 degrees.
Cream eggs and sugar to fluffy, and then combine all other ingredients.
Beat until smooth.
Bake at 350f for 30 minutes. Remove from oven and cool.
Glaze:
Combine sugar and grapefruit juice.
Pour over the cooled cake.
Allow to set before serving.
