Ingredients
1 onion, diced
1 tablespoon TAO Cilantro and Red Onion Infused Olive Oil
1 pound ground turkey
2 tablespoons all-purpose flour
1 tablespoon ketchup
1 tablespoon TAO Italian Espresso Balsamic Vinegar
1 cup frozen peas
1 cup frozen corn
Herbs for seasoning (ex: 1 teaspoon dried parsley; ½ teaspoon garlic and herb seasoning)
¾ cup chicken broth or stock
1 bag Tater Tots
Salt and pepper
1-2 cups shredded Cheddar cheese
Directions
Sauté the onion in olive oil. Add the turkey and cook until browned. Drain any fat.
Add the flour to the meat; stir to combine. Cook for one minute.
Add the ketchup, balsamic vinegar, peas, corn, and seasoning. Stir to combine.
Add the stock and bring it to a boil. Reduce the heat, cover, and simmer for 10 - 15 minutes.
Add salt and pepper to taste.
Pour the mixture into a casserole dish. Place the Tater Tots on top.
Cover with foil. Bake for 45 minutes in a 350F oven.
Remove foil and sprinkle cheese on top of the Tater Tots. Bake for another 10-15 minutes or until the cheese has melted.
