the looks and size of a ghoul is dependent on the race that the body originally came from but what they all have in common is being horribly disfigured, longs sharp teeth, fingers converted into claws, and a long tough tongue for licking bone marrow off of bones
Culture
the ghoul is a creation that necromancers default too when making a reanimation would be too weak. so most ghouls are of the human, pigman, greenskin, or similar races lacking in special powers
ghouls hold no memory of their time alive nor do they hold any real personality. their main purpose is to find dead things and feast on their bone marrow and to obey the orders of their master (if they have one). anything killed by a ghoul will rise as a ghoul itself if not promptly eaten by somthing.
ghouls are dumb creatures but hold a twisted cunning that allows them the capability of strategizing against foes in combat. if paired with other lesser forms of allied undead they may end of their commander upgrading them from an annoying fight into a difficult one.
in combat a ghoul will attack barbarically with its claws and teeth, but every touch from a ghoul has a chance of paralysis and ghouls arent afraid to use their ability to force an entire party to be unable to move by attacking a different opponent when thier current one has been paralyzed. thats not to say their especially intelligent ghouls sometimes been known to try to eat their paralyzed victims alive even though they prefer them dead
