Turkey Bacon Chili Mac
What you need:
- 3 Tbsp. extra virgin olive oil
- 1 cup white onion, diced
- 1 cup red bell pepper, diced
- 1/2 cup Anaheim green chile pepper, diced
- 2 Tbsp. minced garlic
- 2 lb. ground turkey
- 1 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 4 cups chicken broth
- 10 oz. can Rotel diced tomatoes
- 4 oz. tomato paste
- 2 Tbsp. ground cumin
- 1 1/2 Tbsp. chili powder
- 1/4 tsp. garlic
- 1 packet dry Ranch dressing seasoning
- 4 cups cooked (al dente) Ditalini pasta
- 1 pack bacon, cooked and crumbled
- Chopped green onions, optional
Directions:
- In a large deep skillet, heat oil over medium heat. Then add onion, red bell pepper, Anaheim chile, and garlic.
- Cook for about 5 to 8 minutes until softened.
- Add turkey and season with salt and pepper. Crumble while it browns.
- Once turkey is browned, add broth, tomatoes, tomato paste, cumin, chili powder, garlic salt, and Ranch dressing seasoning.
- Stir in cooked pasta and bacon. Simmer on low until heated through.
- Serve topped with green onions, if desired.
