Chicken with Bruschetta Veggies

What you need:

    • 1 lb. thinly sliced chicken breasts
    • 1 tsp. garlic powder
    • 2 Tbsp. olive oil, divided
    • 1 to 2 yellow squash (or zucchini or combo of the two)
    • 4 minced garlic cloves
    • 1 to 2 plum tomatoes, diced
    • 1 red onion, chopped
    • A couple handfuls of fresh spinach
    • 2/3 cup fresh basil, chopped
    • 1 Tbsp. balsamic vinegar
    • Salt and pepper
    • Shredded Parmesan cheese, for serving

Directions:

    1. Drizzle 1 Tbsp. oil over the chicken. Season with garlic powder and salt and pepper, to taste.
    2. Place chicken in a broiler pan and broil for 5 minutes. Flip and then broil for 5 minutes or until cooked through. Keep warm.
    3. Heat 1 Tbsp. oil in a large skillet over medium-high heat.
    4. Add squash and saute for 1 1/2 minutes. Add garlic and saute for 30 more seconds.
    5. Then add tomato, onion, spinach, basil, and vinegar. Season with salt and pepper. Saute for 3 minutes.
    6. Serve chicken topped with vegetables and a sprinkle of Parmesan.
