Chicken with Bruschetta Veggies
What you need:
- 1 lb. thinly sliced chicken breasts
- 1 tsp. garlic powder
- 2 Tbsp. olive oil, divided
- 1 to 2 yellow squash (or zucchini or combo of the two)
- 4 minced garlic cloves
- 1 to 2 plum tomatoes, diced
- 1 red onion, chopped
- A couple handfuls of fresh spinach
- 2/3 cup fresh basil, chopped
- 1 Tbsp. balsamic vinegar
- Salt and pepper
- Shredded Parmesan cheese, for serving
Directions:
- Drizzle 1 Tbsp. oil over the chicken. Season with garlic powder and salt and pepper, to taste.
- Place chicken in a broiler pan and broil for 5 minutes. Flip and then broil for 5 minutes or until cooked through. Keep warm.
- Heat 1 Tbsp. oil in a large skillet over medium-high heat.
- Add squash and saute for 1 1/2 minutes. Add garlic and saute for 30 more seconds.
- Then add tomato, onion, spinach, basil, and vinegar. Season with salt and pepper. Saute for 3 minutes.
- Serve chicken topped with vegetables and a sprinkle of Parmesan.
