Chocolate Oreo Cream Cake

What you need:

For the cake:

    • 1 pkg. chocolate cake mix
    • Ingredients as called for on the box

For the filling:

    • 8 oz cream cheese, softened
    • 1/2 cup granulated sugar
    • 2 cups Cool Whip
    • 12 Oreos, crushed coarsely

For the frosting:

    • 1/3 cup plus 1 Tbsp. cocoa powder
    • 6 Tbsp. unsalted butter, softened
    • 4 1/2 cups powdered sugar
    • 1 1/2 tsp. vanilla extract
    • 5 to 6 Tbsp. milk, plus some if needed

Directions:

    1. Prepare cake according to package instructions and pour into two 9-inch round cake pans prepared with parchment paper and sprayed with nonstick spray.
    2. Cook cake according to package instructions and let cool for 10 minutes in pans. Then remove and allow to cool completely on a wire rack.
    3. Once the cakes have cooled, make filling by beating cream cheese and sugar together.
    4. Fold in Cool Whip and then fold in crushed Oreos.
    5. Make frosting by whisking cocoa powder and powdered sugar together.
    6. Add butter, vanilla, and milk. Blend until smooth, adding additional milk until desired consistency is reached.
    7. To assemble, even the tops of the cakes by cutting with a serrated knife. Top one cake with half the filling and then the other cake.
    8. Fill in the middle with remaining filling so that the sides are even. You may have leftover filling.
    9. Frost entire cake and then serve!
