Southern Fried Cabbage with Sausage

What you need:

    • 3 Tbsp. butter or bacon fat
    • 1 small green cabbage, chopped
    • 1/2 cup onion, diced
    • 1 lb. smoked sausage, sliced
    • 1 can (15 oz.) diced tomatoes, undrained
    • 1/4 tsp. cajun seasoning
    • Garlic powder to taste
    • Salt and pepper to taste

Directions:

    1. In a large deep skillet, cook sausage for about 3 minutes over medium-high heat. Remove and seat aside.
    2. Add butter/bacon fat to skillet and let melt. Add cabbage and cook on medium-high heat for about 5 minutes.
    3. Add onion, tomato, seasonings, and sausage. Cover and cook for 10 minutes.
    4. Uncover and cook until cabbage is to desired doneness and most of the liquid in the skillet has reduced.
