Slow Cooker Broccoli Cheese Soup

What you need:

    • 1 lb. frozen broccoli florets
    • 1 yellow onion, diced
    • 2 carrots, finely diced
    • 5 cups chicken broth
    • 2 cans cream of celery soup
    • 1/4 tsp. seasoning salt
    • 1/4 tsp. salt
    • 1/2 tsp. black pepper
    • 1/8 tsp. cayenne pepper
    • 1 1/2 lb. Velveeta
    • 2 cups shredded sharp cheddar cheese
    • Hot sauce, to taste

Directions:

    1. In a slow cooker, add broccoli, onion, carrots, chicken broth, cream of celery soup, seasoning salt, salt, black pepper, and cayenne pepper. Stir together.
    2. Cook on HIGH for 4 hours.
    3. After 4 hours, take a potato masher (or immersion blender) and mash some of the soup.
    4. Add cheese and hot sauce, then cook on LOW for 15 minutes.
    5. Stir until cheese has melted. Adjust salt, pepper, and hot sauce to your liking.
