Butterfinger Peanut Butter Oatmeal Cookies
What you need:
- 1/2 cup salted butter, at room temperature
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar
- 3/4 cup creamy peanut butter
- 1 large egg, at room temperature
- 1 tsp. vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp. baking soda
- 1/2 cup quick oats
- 1 cup chopped Butterfingers
- 1/2 cup milk chocolate chips
Directions:
- In a stand mixer, cream together butter and sugars together for about 3 minutes.
- Then add peanut butter, egg, and vanilla in that order; scraping down the side of the bowl as needed.
- In a medium bowl, mix together flour and baking soda. Then slowly add dry ingredients into wet ingredients and mix until just combined.
- Fold in quick oats, Butterfingers, and chocolate chips.
- If dough is too soft to handle by hand, chill for 30 minutes.
- Roll 2 Tbsp. of dough into balls and then place on a parchment paper or silicone mat lined baking sheet.
- Bake in a preheated 350 degree oven for 8 to 10 minutes - no longer than 10 minutes. Gently press down each cookie with a fork or back of a spoon.
- Allow to cool for 10 minutes and then remove to a wire rack to cool completely.
