Steak Hash with Pepperjack Sauce

What you need:

For the hash:

    • 4 cups cubed red potatoes
    • 1/2 onion, diced
    • 1 green bell pepper, diced
    • 1 Tbsp. butter
    • 1 Tbsp. olive oil
    • Salt and pepper

For the pepperjack sauce:

    • 2 Tbsp. butter
    • 1 Tbsp. olive oil
    • 1 Tbsp. all purpose flour
    • 2/3 cup milk
    • 2/3 cup shredded pepperjack cheese

For serving:

    • 2 1/2 cups steak, cubed and cooked
    • 6 eggs, cooked in desired method

Directions:

    1. For the hash: In a skillet, heat butter and olive oil over medium-high heat. Add potatoes, onions, and green bell peppers until potatoes are fork tender, stirring often.
    2. For the pepperjack sauce: When potatoes are almost done, start making the sauce, by heating butter and olive oil in a small skillet over medium heat.
    3. Once butter has melted, add flour and stir.
    4. Add milk slowly while continuously whisking.
    5. Then stir in cheese and continue to stir until cheese has melted.
    6. Add cooked steak to potatoes. Cook for about 2 minutes until steak has heated through.
    7. Season with salt and pepper, to taste.
    8. Serve hash topped with eggs and smothered with sauce.
