20-Minute Taco Salad

What you need:

    • 1 lb. ground beef, turkey, or chicken
    • Salt and pepper, to taste
    • 2 Tbsp. taco seasoning or 1 packet taco seasoning
    • 1/4 cup water
    • 8 cups romaine lettuce, chopped
    • 1 can (15 oz.) black beans, rinsed and drained
    • 1 can (15 oz.) corn, drained
    • 1 cup cherry or grape tomatoes, halved
    • 1 cup grated cheddar cheese
    • 1 large avocado, sliced or diced
    • 1 cup salsa
    • Sour cream, if desired

Directions:

    1. Cook and crumble ground beef in a large skillet over medium heat. Season with salt and pepper and drain off excess grease.
    2. Add taco seasoning and water. Simmer for 5 minutes until water is mostly gone.
    3. Assemble the salad by dividing lettuce, beans, corn, tomatoes, cheese, and avocado. Then top with beef and salsa. Top with sour cream, if desired.
