Cocadas
What you need:
- 4 egg whites
- 1 1/4 cup granulated sugar
- 1/4 tsp. salt
- 1 Tbsp. honey
- 2 cups shredded or shaved unsweetened coconut
- 1 tsp. vanilla
- 1/4 cup all-purpose flour
Directions:
- In a medium saucepan, combine all ingredients.
- Cook over medium-low heat, stirring constantly, for about 12 to 15 minutes.
- When mixture is bubbling and thick, remove from heat.
- Immediately transfer mixture to a bowl to stop cooking. Let cool for 10 minutes.
- Place small spoonfuls of mixture onto a parchment paper or silicone mat lined baking sheet.
- Bake in a preheated 350 degree oven for about 18 to 20 minutes.
- Remove from oven and let cool for a few minutes before removing to a wire rack.
