Cocadas

What you need:

    • 4 egg whites
    • 1 1/4 cup granulated sugar
    • 1/4 tsp. salt
    • 1 Tbsp. honey
    • 2 cups shredded or shaved unsweetened coconut
    • 1 tsp. vanilla
    • 1/4 cup all-purpose flour

Directions:

    1. In a medium saucepan, combine all ingredients.
    2. Cook over medium-low heat, stirring constantly, for about 12 to 15 minutes.
    3. When mixture is bubbling and thick, remove from heat.
    4. Immediately transfer mixture to a bowl to stop cooking. Let cool for 10 minutes.
    5. Place small spoonfuls of mixture onto a parchment paper or silicone mat lined baking sheet.
    6. Bake in a preheated 350 degree oven for about 18 to 20 minutes.
    7. Remove from oven and let cool for a few minutes before removing to a wire rack.
