German Cheese Soup
What you need:
- 2 Tbsp. olive oil
- 2 Tbsp. unsalted butter
- 1 medium onion, diced
- 2/3 cup diced carrots
- 2/3 cup diced potatoes
- 1/3 cup all-purpose flour
- 1 1/2 cups beer (we went with Blue Moon)
- 1 cup milk
- 2 1/2 cups chicken broth
- 4 bratwurst sausages, cooked, halved and sliced
- 3 cups shredded sharp cheddar cheese
- 1 tsp. ground black pepper
- Salt, to taste
Directions:
- In a large stockpot, heat olive oil and butter over medium heat.
- Add onion, carrots, and potatoes to the pot and saute until tender.
- Add flour and stir well.
- Whisk in beer, milk, and chicken broth.
- Bring to a slow simmer and let thicken, stirring often, for about 10 minutes.
- Add bratwursts and cheese. Stir. Season with pepper and add salt to taste.
- Heat over medium low heat for 5 minutes.
