German Cheese Soup

What you need:

    • 2 Tbsp. olive oil
    • 2 Tbsp. unsalted butter
    • 1 medium onion, diced
    • 2/3 cup diced carrots
    • 2/3 cup diced potatoes
    • 1/3 cup all-purpose flour
    • 1 1/2 cups beer (we went with Blue Moon)
    • 1 cup milk
    • 2 1/2 cups chicken broth
    • 4 bratwurst sausages, cooked, halved and sliced
    • 3 cups shredded sharp cheddar cheese
    • 1 tsp. ground black pepper
    • Salt, to taste

Directions:

    1. In a large stockpot, heat olive oil and butter over medium heat.
    2. Add onion, carrots, and potatoes to the pot and saute until tender.
    3. Add flour and stir well.
    4. Whisk in beer, milk, and chicken broth.
    5. Bring to a slow simmer and let thicken, stirring often, for about 10 minutes.
    6. Add bratwursts and cheese. Stir. Season with pepper and add salt to taste.
    7. Heat over medium low heat for 5 minutes.
