Mexi Ranch Chicken Salad

What you need:

    • 1/2 cup ranch dressing
    • 1/2 cup salsa
    • Romaine lettuce
    • 1 cup crushed tortilla chips
    • 2 cups shredded or diced cooked seasoned chicken [taco seasoning, rotisserie seasoning, dry ranch dressing mix, etc.]
    • 1 can (15.5 oz) red beans, rinsed and drained
    • 1 cup shredded cheddar cheese
    • 1 cup corn
    • 2 cups grape tomatoes, halved
    • 1/2 cup diced green onion
    • For garnish: cilantro, avocado

Directions:

    1. Mix together ranch dressing and salsa in a small bowl. Refrigerate until ready to serve.
    2. To serve, divide lettuce between serving dishes. Top with tortilla chips, chicken, beans, cheese, corn, tomatoes, and green onions.
    3. Top each salad with a drizzle of salsa ranch dressing and garnishes, if desired.
