Slow Cooked Chicken Fajita Chili

What you need:

    • 2 cups chopped, cooked chicken
    • 1 tsp. olive oil
    • 1 yellow onion, diced
    • 1 clove minced garlic
    • 20 to 25 oz. V8 juice
    • 2 cans black beans or kidney beans, rinsed and drained
    • 2 1/2 Tbsp. fajita seasoning
    • 2 cans Rotel
    • Shredded cheddar cheese and sour cream for serving

Directions:

    1. Cook onion in a skillet in olive oil over medium heat until softened.
    2. Add onions with remaining ingredients (except cheese and sour cream) to a crockpot.
    3. Cook on LOW for 3 to 4 hours.
    4. Serve topped with cheese and sour cream, if desired.
