Bacon Beer Cheese Soup with Chicken

What you need:

    • 1 pkg. bacon, diced
    • 1 lb. boneless, skinless chicken breasts, diced into bite-size pieces
    • 4 Tbsp. unsalted butter, cut into 1 Tbsp. pieces
    • 1/4 cup all-purpose flour
    • 2 tsp. garlic powder
    • 1/4 to 1 tsp. cayenne pepper
    • 1 tsp. smoked paprika
    • 1 1/2 tsp. salt
    • 1 tsp. black pepper
    • 1 cup Belgian-style wheat beer
    • 1 cup chicken broth
    • 2 cups half and half
    • 8 oz. shredded mild cheddar cheese
    • 1 tsp. Worcestershire sauce
    • Chopped chives, for garnish
    • Croutons, for garnish

Directions:

    1. Cook bacon in a large stockpot over medium-high heat. Remove with a slotted spoon to a paper towel lined plate. Reserve 1 Tbsp. bacon grease in the pot.
    2. Add chicken to the pot and season with 1/2 tsp. salt. Cook until done. Remove with a slotted spoon to the same plate as the bacon.
    3. Add butter to pot and stir until melted. Whisk in flour and seasonings. Cook for 1 minute while whisking.
    4. Add beer and whisk. Cook for 2 more minutes. Then add chicken broth and reduce heat to medium.
    5. Add cheese slowly, whisking a little in at a time until melted and incorporated.
    6. Add Worcestershire sauce, chicken, and bacon. Stir. Simmer until ready to dip up.
    7. Serve with bacon, chives, and croutons.
