Bacon Beer Cheese Soup with Chicken
What you need:
- 1 pkg. bacon, diced
- 1 lb. boneless, skinless chicken breasts, diced into bite-size pieces
- 4 Tbsp. unsalted butter, cut into 1 Tbsp. pieces
- 1/4 cup all-purpose flour
- 2 tsp. garlic powder
- 1/4 to 1 tsp. cayenne pepper
- 1 tsp. smoked paprika
- 1 1/2 tsp. salt
- 1 tsp. black pepper
- 1 cup Belgian-style wheat beer
- 1 cup chicken broth
- 2 cups half and half
- 8 oz. shredded mild cheddar cheese
- 1 tsp. Worcestershire sauce
- Chopped chives, for garnish
- Croutons, for garnish
Directions:
- Cook bacon in a large stockpot over medium-high heat. Remove with a slotted spoon to a paper towel lined plate. Reserve 1 Tbsp. bacon grease in the pot.
- Add chicken to the pot and season with 1/2 tsp. salt. Cook until done. Remove with a slotted spoon to the same plate as the bacon.
- Add butter to pot and stir until melted. Whisk in flour and seasonings. Cook for 1 minute while whisking.
- Add beer and whisk. Cook for 2 more minutes. Then add chicken broth and reduce heat to medium.
- Add cheese slowly, whisking a little in at a time until melted and incorporated.
- Add Worcestershire sauce, chicken, and bacon. Stir. Simmer until ready to dip up.
- Serve with bacon, chives, and croutons.
