Sugar-Crusted Chocolate Chip Muffins
What you need:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1/2 tsp. vanilla extract
- 1 egg
- 3/4 cup mini semisweet chocolate chips
- 3 Tbsp. granulated sugar
- 2 Tbsp. brown sugar
Directions:
- In a medium bowl, mix together flour, 1/2 cup granulated sugar, baking powder, salt, and chocolate chips.
- In a small bowl, whisk together milk, vegetable oil, vanilla, and egg.
- In another small bowl, combine 3 Tbsp. granulated sugar and brown sugar for the topping and set aside.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fill a muffin pan with paper tins and then fill each paper tin with batter about 2/3 full.
- Top each with a little of the topping mixture.
- Bake in a preheated 375 degree oven for about 18 to 20 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for 1 minute and then remove from muffin pan.
