French Onion Burgers
What you need:
- 1 tsp. cornichons, finely diced
- 1 1/2 Tbsp. mayonnaise
- 1 tsp. ketchup
- 1 bunch leeks
- 1 Tbsp. butter
- 1 medium yellow onion
- 1 to 2 lb. ground beef (I prefer 80/20)
- 1/2 cup milk
- Hot sauce, to taste
- 1/2 cup all purpose flour
- Vegetable oil
- Gruyere cheese, sliced
- Onion rolls, toasted
- Salt and pepper, to taste
Directions:
- Mix together cornichons, mayonnaise, and ketchup. Place in fridge while you prepare the rest.
- Cut off the root and dark green portions of the leeks. Place in a bowl of cold water and let dirt settle to the bottom. Drain and then pat dry with a paper towel.
- In a large skillet, melt butter over medium heat. Add leaks, season with salt, and saute for about 15 minutes.
- Halve your onion and take a 1/2-inch slice off one of onions. Finely dice that slice and set the remaining onion aside.
- Mix together ground beef and diced onion. Form into 6 to 8 patties. Salt and pepper each patty.
- Preheat an inch of oil in a deep skillet over medium-high heat until it reaches 375 degrees.
- Slice remaining onions. Place milk and hot sauce in a bowl and whisk together. In a separate bowl, add flour.
- Dredge sliced onions through milk mixture and then flour.
- Fry in hot oil until they are browned. Place on a paper towel-lined plate and season with salt.
- Grill patties or cook in a skillet. Flip once and add gruyere slices to each patty and let melt a little.
- Slather prepared cornichon sauce on the bottom bun. Top with caramelized leeks, then burger and crispy onion rings. Cover with the top bun and serve!
