Cheesy Sausage Foil Packets

What you need:

    • 1 pkg. smoked sausage, sliced
    • 3/4 lb. baby red potatoes, quartered
    • 3/4 lb. green beans, trimmed
    • 2 bell peppers, sliced
    • 1 onion, chopped
    • 3/4 Tbsp. dried oregano
    • 3/4 Tbsp. dried parsley
    • 1/2 tsp. garlic powder
    • 1 tsp. paprika
    • 4 Tbsp. unsalted butter, divided
    • Salt and pepper to taste
    • 2 cups shredded sharp cheddar cheese

Directions:

    1. In a large bowl, toss sausage and veggies with oregano, parsley, garlic, and paprika. Season with salt and pepper to taste.
    2. Separate between four pieces of foil and top with 1 Tbsp. butter.
    3. Seal foil into a packet.
    4. Grill over high heat for 25 to 30 minutes (or in an oven at 400 degrees for 35 to 40 minutes) until potatoes are fork tender.
    5. Remove from heat and open carefully. Top with cheddar cheese and let melt.

Note: For a little bit of crunch on the sausage, open packet after grilling and broil for a few minutes before adding cheese.
