Cheesy Sausage Foil Packets
What you need:
- 1 pkg. smoked sausage, sliced
- 3/4 lb. baby red potatoes, quartered
- 3/4 lb. green beans, trimmed
- 2 bell peppers, sliced
- 1 onion, chopped
- 3/4 Tbsp. dried oregano
- 3/4 Tbsp. dried parsley
- 1/2 tsp. garlic powder
- 1 tsp. paprika
- 4 Tbsp. unsalted butter, divided
- Salt and pepper to taste
- 2 cups shredded sharp cheddar cheese
Directions:
- In a large bowl, toss sausage and veggies with oregano, parsley, garlic, and paprika. Season with salt and pepper to taste.
- Separate between four pieces of foil and top with 1 Tbsp. butter.
- Seal foil into a packet.
- Grill over high heat for 25 to 30 minutes (or in an oven at 400 degrees for 35 to 40 minutes) until potatoes are fork tender.
- Remove from heat and open carefully. Top with cheddar cheese and let melt.
Note: For a little bit of crunch on the sausage, open packet after grilling and broil for a few minutes before adding cheese.
