Roasted Red Pepper and Sausage Pasta

What you need:

    • 1 lb. Italian sausage
    • 4 cloves minced garlic
    • 1 1/2 cups milk
    • 1 1/2 cups chicken broth
    • 1 jar (16 oz.) roasted red peppers, drained and pureed.
    • 12 oz. penne pasta or other pasta of your choice
    • 4 oz. cream cheese, cubed
    • 1/2 cup grated Parmesan
    • 3 to 4 handfuls of baby spinach

Directions:

    1. In a large skillet, cook and crumble sausage over medium heat until browned. Add garlic when it is almost done.
    2. Add milk, chicken broth, pureed red pepper, and pasta. Season with salt and pepper.
    3. Bring to a boil, then cover and reduce heat. Simmer until pasta has cooked through, stirring occasionally, about 12 minutes. If the pasta hasn't cooked through and you need more liquid, add additional milk and broth, starting at 1/4 cup each.
    4. Add cream cheese and stir until cream cheese melts.
    5. Stir in spinach, 1 handful at a time, until wilted and heated through.
    6. Then add Parmesan and stir until melted.
    7. Remove from heat and serve immediately.
