Sheet Pan Sausage and Veggies
What you need:
- 1 to 2 precooked smoked sausage, sliced into 1/2-inch rounds
- 1 bell pepper (any color), diced into bite size pieces
- 1 large zucchini, sliced into half moons
- 1 cup cherry or grape tomatoes
- 2 to 3 Tbsp. olive oil
- 1 Tbsp. dried onion flakes
- 1 Tbsp. smoked paprika
- 1 Tbsp. dried parsley
- 1 Tbsp. dried oregano
- 1 tsp. salt, plus some if needed
- 1/2 tsp. black pepper, plus some if needed
- Parmesan cheese for garnish (optional)
Directions:
- Line a baking sheet with aluminum foil and add the sausage and veggies to the pan.
- Drizzle with olive oil then sprinkle with all the seasonings. Toss gently to coat and then make sure they are in a nice, even layer.
- Bake in a preheated 400 degree oven for 30 minutes or until vegetables are tender. Toss half way through cooking.
- Serve topped with Parmesan, if desired.
