Sheet Pan Sausage and Veggies

What you need:

    • 1 to 2 precooked smoked sausage, sliced into 1/2-inch rounds
    • 1 bell pepper (any color), diced into bite size pieces
    • 1 large zucchini, sliced into half moons
    • 1 cup cherry or grape tomatoes
    • 2 to 3 Tbsp. olive oil
    • 1 Tbsp. dried onion flakes
    • 1 Tbsp. smoked paprika
    • 1 Tbsp. dried parsley
    • 1 Tbsp. dried oregano
    • 1 tsp. salt, plus some if needed
    • 1/2 tsp. black pepper, plus some if needed
    • Parmesan cheese for garnish (optional)

Directions:

    1. Line a baking sheet with aluminum foil and add the sausage and veggies to the pan.
    2. Drizzle with olive oil then sprinkle with all the seasonings. Toss gently to coat and then make sure they are in a nice, even layer.
    3. Bake in a preheated 400 degree oven for 30 minutes or until vegetables are tender. Toss half way through cooking.
    4. Serve topped with Parmesan, if desired.
