Honey Garlic Chicken Stir Fry
What you need:
- 2 Tbsp. olive oil
- 1/2 bundle asparagus, cut into 1-inch pieces
- 1 small yellow squash, diced
- 1 small zucchini, diced
- 1 red bell pepper, cut into chunks
- Salt and pepper, to taste
- 1 lb. chicken, cubed
- 1/4 cup soy sauce
- 1/4 cup honey
- 1 tsp. vegetable oil
- 1/2 cup chicken broth
- 3 cloves minced garlic
- 2 tsp. cornstarch
- Pinch of red pepper flakes
- Cooked rice, for serving
Directions:
- Heat olive oil in a large skillet over medium-high heat.
- Add asparagus, squash, zucchini, red pepper, and salt and pepper, to taste. Saute until tender. Remove to a plate and set aside.
- Add chicken to the same skillet and cook until no longer pink.
- In a small bowl, whisk together soy sauce, honey, vegetable oil, chicken broth, garlic, and cornstarch.
- Add vegetables to the skillet with the chicken and pour the sauce over the top.
- Simmer until the sauce begins to thicken.
- Serve over rice, if desired.
