Cowboy Tumbleweed Burgers
What you need:
- 1 1/2 lb. ground beef
- 1/4 lb. ground Chorizo
- 2 tsp. Montreal steak seasoning
- 2 cups yellow sweet onions, thinly sliced
- 1 1/2 Tbsp. unsalted butter
- 2 Tbsp. water
- 1/4 tsp. salt
- 1/8 tsp. ground black pepper
- 1 large tomato, sliced
- Romaine lettuce leaves
- Bacon, cooked and broken in half
- Thinly sliced cheddar jack cheese
- Pickled jalapenos
- Hamburger buns
Directions:
- In a large bowl, mix together ground beef, chorizo, and Montreal steak seasoning until just combined. Divide into 6 patties then place on a plate, cover with plastic wrap, and refrigerate until other toppings are ready to go.
- Preheat a medium skillet over medium-low heat. Add butter, water, onions, salt, and pepper. Stir until butter has melted.
- Cook onions over medium-low until golden brown and tender, stirring occasionally, about 20 to 25 minutes. Remove to a plate or bowl and tent with foil to keep warm.
- Grill or cook burgers in a skillet, browning on each side, flipping one time. Add cheese in last few minutes of cooking.
- Assemble burgers like so: bottom bun, burger, two half pieces of bacon, lettuce, tomato, caramelized onions, jalapenos, top bun.
