Roasted Garlic and Asparagus Soup

What you need:

    • 2 lb. asparagus, trimmed
    • 10 cloves minced garlic
    • 2 Tbsp. olive oil
    • Salt and pepper, to taste
    • 3 cups vegetable broth, plus some to thin out
    • 1 cup milk
    • Chopped parsley for garnish (optional)

Directions:

    1. Toss asparagus and garlic with olive oil and season with salt and pepper.
    2. Arrange evenly on a foil-lined baking sheet.
    3. Roast in a preheated 450 degree oven for 12 minutes.
    4. Transfer roasted asparagus and garlic to a blender.
    5. Add broth and milk to blender and blend until smooth. You may have to do this in batches depending on the size of your blender.
    6. Transfer mixture to a large stockpot and heat over medium-high.
    7. Thin by 1/4 cup broth as needed to desired thickness.
    8. Season with salt and pepper to taste. Serve garnished with parsley.
