Double Blueberry Muffins

What you need:

For the muffins:

    • 1 1/2 cups all purpose flour
    • 3/4 cup granulated sugar
    • 1/2 tsp. salt
    • 2 tsp. baking powder
    • 1/3 cup vegetable oil
    • 1 large egg
    • Milk
    • 1 pint fresh blueberries (about 2 cups)

For the topping:

    • 1/4 cup granulated sugar
    • 2 1/2 Tbsp. flour
    • 2 Tbsp. unsalted butter, at room temperature
    • 1 tsp. cinnamon

Directions:

    1. For the batter: combine dry ingredients in a bowl. Add blueberries and toss to coat.
    2. In a measuring glass, add oil and egg. Then fill milk to 1 cup line.
    3. Add wet ingredients to dry and stir until just combined.
    4. Divide batter evenly into a muffin pan lined with paper liners. Set aside.
    5. For the topping: mix ingredients together until crumbly.
    6. Sprinkle topping over the muffins.
    7. Bake in a preheated 400 degree oven for 20 to 25 minutes, until golden brown and a toothpick inserted into the middle comes out clean.
    8. Let rest in pan for 5 minutes before removing to a wire rack.
