Beef & Noodle Soup

What you need:

    • 2 tsp. butter
    • 1 medium yellow onion, finely diced
    • 3 carrots, peeled and sliced into small pieces
    • 3 stalks celery, sliced into small pieces
    • 1 to 2 lb. beef stew meat
    • 6 cups beef broth
    • 8 oz. egg noodles
    • Salt and pepper
    • 2 Tbsp. chopped parsley.

Directions:

    1. Heat butter in a large stockpot over medium heat. Then add onion. Season with salt and pepper.
    2. Cook for 3 to 5 minutes until onions are translucent.
    3. Add carrots and celery. Cook for 3 more minutes.
    4. Add beef broth and bring it to a simmer.
    5. Then add beef and simmer for 15 minutes or until vegetable have softened.
    6. Add noodles and bring to a boil. Boil until noodles are cooked al dente.
    7. Season with salt and pepper to taste. Stir in chopped parsley and serve.
