Baked Bruschetta Chicken
What you need:
- 1/2 cup all purpose flour
- 3 eggs, lightly beaten
- 1/4 cup shredded Parmesan
- 1/3 cup Italian breadcrumbs
- 2 lb. boneless skinless chicken breasts
- 1 Tbsp. unsalted butter, melted
- 1 1/2 cups roma tomatoes, diced
- 1 tsp. minced garlic cloves
- 1 Tbsp. EVOO
- 2 Tbsp. shredded Parmesan
- 2 Tbsp. fresh basil leaves, finely chopped
- 1 Tbsp. balsamic vinegar
- Salt and pepper, to taste
Directions:
- Place flour into a shallow dish and eggs in a shallow bowl.
- Mix together 1/4 cup Parmesan with bread crumbs and place in a shallow dish.
- Dredge chicken through flour, followed by eggs, and then Parmesan mixture.
- Place chicken on a greased 9x13-inch baking pan.
- Once all chicken is in the pan, pour melted butter over the top.
- Bake in a preheated 375 degree oven for 30 minutes or until chicken is cooked through.
- Meanwhile, mix tomatoes, garlic, olive oil, Parmesan, basil, balsamic vinegar, salt, and pepper together in a bowl.
- Serve chicken topped with tomato mixture.
