Steak Fajita Pasta

What you need:

    • 1 1/2 tsp. each dried oregano and ground cumin
    • 1 tsp. garlic powder
    • 1/2 tsp. chili powder
    • 1/2 tsp. paprika
    • 1/4 tsp. red pepper flakes
    • 1/2 tsp. ground black pepper
    • 1 tsp. salt
    • 2 lb. beef stir fry meat or any other thin beef sliced thinly
    • 2 Tbsp. olive oil, divided
    • 1 medium yellow onion, sliced thinly
    • 2 bell peppers (any color), sliced thinly
    • 2 cloves minced garlic
    • 1 can (15 oz.) diced tomatoes
    • 2 1/2 cups beef stock
    • 3 cups dry penne pasta
    • 1/4 cup sour cream

Directions:

    1. In a small bowl, mix together all the spices. Then sprinkle over the meat and rub into meat.
    2. In a large, deep skillet, heat 1 Tbsp. olive oil over medium-high heat.
    3. Add steak and brown all sides, stirring as needed, about 5 minutes. Remove from skillet and set aside.
    4. Add remaining 1 Tbsp. olive oil to skillet. Add onion, pepper, and garlic to the skillet.
    5. Cook, stirring often, for about 5 minutes. Remove from skillet and set aside with steak.
    6. Add tomatoes, beef broth, and pasta to skillet. And bring to a boil and cook for about 8 to 12 minutes or until pasta is al dente with some liquid remaining in skillet.
    7. Add meat and peppers back to the skillet. And stir.
    8. Add sour cream and reduce heat to low. Cook until sour cream has heated through and is mixed in completely.
