Sourdough Waffles

What you need:

For the overnight sponge:

    • 2 cups all purpose flour
    • 2 Tbsp. granulated sugar
    • 2 cups buttermilk
    • 1 cup sourdough starter (unfed, straight from the fridge)

For the waffles:

    • 2 large eggs
    • 1/4 cup melted unsalted butter
    • Overnight sponge
    • 3/4 tsp. salt
    • 1 tsp. baking soda

Directions:

    1. For the overnight sponge: Mix together all ingredients in a large bowl until well blended. Cover. Let rest overnight at room temperature.
    2. In a liquid measuring cup, mix together eggs and butter.
    3. Add egg mixture to overnight sponge.
    4. Then add salt and baking soda to the sponge, mix well. Batter should bubble.
    5. Pour batter into a preheated waffle iron as directed by manufacturer. Bake according to waffle iron manufacturer.
    6. Serve with your favorite waffle toppings!
