One Pot Bacon Cheeseburger Pasta

What you need:

    • Olive oil
    • 1 small onion, chopped
    • 1 lb. ground beef
    • Salt and pepper to taste
    • 2 Tbsp. tomato paste
    • 3 Tbsp. Worcestershire sauce
    • 1 can (14 oz.) petite diced tomatoes
    • 1 can (8 oz.) tomato sauce
    • 1/4 cup ketchup
    • 3 Tbsp. yellow mustard
    • 2 1/2 to 3 cups beef broth
    • 1 box (12 oz.) shell pasta
    • 3 Tbsp. fresh parsley, chopped
    • 4 oz. cream cheese
    • 2 cups smoked Gouda, shredded, divided

For garnish:

    • 1 medium tomato, diced
    • 1/4 cup bacon bits, plus some
    • 3/4 cup shredded lettuce

Directions:

    1. Add a drizzle of olive oil to a stock pot and heat over medium heat.
    2. Add onion and cook for 2 to 3 minutes.
    3. Add ground beef and crumble while it browns. Season with salt and pepper and drain grease, if needed.
    4. Add tomato paste and Worcestershire sauce and cook for 2 to 3 more minutes.
    5. Add diced tomatoes, tomato sauce, ketchup, and mustard.
    6. Add 2 1/2 cups beef broth to start. Then add uncooked pasta.
    7. Cover stockpot and bring to a boil.
    8. Then reduce heat and cook for 8 to 10 minutes or until pasta is cooked al dente. Add remaining 1/2 cup beef broth if it gets too thick or the pasta isn't done cooking.
    9. Remove from heat and add cream cheese and 1 cup of gouda.
    10. Stick under a broiler until cheese is golden and bubbly.
    11. Garnish with remaining gouda, tomato, bacon bits, and lettuce.
