One Pot Bacon Cheeseburger Pasta
What you need:
- Olive oil
- 1 small onion, chopped
- 1 lb. ground beef
- Salt and pepper to taste
- 2 Tbsp. tomato paste
- 3 Tbsp. Worcestershire sauce
- 1 can (14 oz.) petite diced tomatoes
- 1 can (8 oz.) tomato sauce
- 1/4 cup ketchup
- 3 Tbsp. yellow mustard
- 2 1/2 to 3 cups beef broth
- 1 box (12 oz.) shell pasta
- 3 Tbsp. fresh parsley, chopped
- 4 oz. cream cheese
- 2 cups smoked Gouda, shredded, divided
For garnish:
- 1 medium tomato, diced
- 1/4 cup bacon bits, plus some
- 3/4 cup shredded lettuce
Directions:
- Add a drizzle of olive oil to a stock pot and heat over medium heat.
- Add onion and cook for 2 to 3 minutes.
- Add ground beef and crumble while it browns. Season with salt and pepper and drain grease, if needed.
- Add tomato paste and Worcestershire sauce and cook for 2 to 3 more minutes.
- Add diced tomatoes, tomato sauce, ketchup, and mustard.
- Add 2 1/2 cups beef broth to start. Then add uncooked pasta.
- Cover stockpot and bring to a boil.
- Then reduce heat and cook for 8 to 10 minutes or until pasta is cooked al dente. Add remaining 1/2 cup beef broth if it gets too thick or the pasta isn't done cooking.
- Remove from heat and add cream cheese and 1 cup of gouda.
- Stick under a broiler until cheese is golden and bubbly.
- Garnish with remaining gouda, tomato, bacon bits, and lettuce.
