Italian Mozzarella Chicken Foil Packets
What you need:
- 4 thinly sliced chicken breasts
For the marinade:
- 1/4 cup extra virgin olive oil
- 2 Tbsp. lemon juice
- 1 Tbsp. Dijon mustard
- 1 Tbsp. balsamic vinegar
- 3 to 4 cloves minced garlic
- 1 tsp. dried basil
- 1 tsp. dried parsley
- 1 tsp. onion powder
- 1 tsp. salt
- 1 tsp. dried oregano
- 1/2 tsp. paprika
- 1/4 tsp. ground black pepper
- 1/4 tsp. crushed red pepper flakes
For the veggies:
- 2 medium zucchini, thinly sliced
- 2 cups potatoes, cubed in 1/2-inch pieces
- 3 to 4 medium carrots, sliced
- 1/2 small onion, diced
- 2 Tbsp. butter, divided into 8 cubes
- 1 cup shredded mozzarella cheese
For garnish:
- Fresh parsley, chopped
- Fresh lemon juice
Directions:
- Whisk together all marinade ingredients and place in a gallon-size zipper bag. Remove 1/4 cup marinade and set aside.
- Add chicken to zipper bag, seal, and marinate for 2 hours in the refrigerator.
- Towards the end of your chicken marinating, place potatoes and carrots in a large microwave-safe dish. Add 1 Tbsp. water, cover, and microwave for 5 minutes. Drain, if needed.
- In a large bowl, stir together potatoes and carrots with zucchini, onions, and 1/4 cup reserved marinade.
- To assemble: using four large pieces of heavy duty aluminum foil, spray lightly with nonstick cooking spray. Add a piece of chicken in the middle of each piece of foil.
- Divide vegetables between packets and place around chicken. Place 2 cubes of butter in each packet. Seal and transfer to baking sheet.
- To bake: cook in a preheated 400 degree oven for 20 to 25 minutes or until vegetables are tender and chicken is cooked completely. Open foil carefully and sprinkle chicken with cheese. Broil packets open until cheese has melted.
- To grill: cook on a preheated 400 degree grill with the lid closed for 15 to 20 minutes or until vegetables are tender and chicken is cooked completely. Open foil carefully and sprinkle chicken with cheese. Close lid and grill until cheese has melted.
- Garnish with fresh parsley and lemon juice.
