Wedge Salad with Blue Cheese Dressing

Dressing Ingredients:

    • 1/4 cup mayonnaise
    • 1/4 cup buttermilk
    • 1/2 teaspoon dijon mustard
    • 1 teaspoon white vinegar
    • 1/4 cup crumbled blue cheese

Salad Ingredients:

    • 1 head iceberg lettuce, cut into wedges
    • 4 slices bacon, cooked until crisp (or substitute pancetta or prosciutto)
    • 1 1/2 cups assorted tomatoes

-In a small bowl, whisk together dressing ingredients until combined.

-Arrange iceberg wedges and tomatoes on a large platter.

-Drizzle wedges/tomatoes with dressing. Crumble bacon over the wedges.

-Sprinkle with additional blue cheese crumbles, if desired.
