Eyeball Punch
- 2 two-liter bottles ginger ale
- 64 oz. cranberry juice
- 1 pint sherbet
for eyeball ice cubes: blueberries, kiwi slices
Freeze the ice cubes:
-You will need freezer-safe bowls or other round containers.
- Place a blueberry in the bottom of the bowl.
- With a knife, remove a blueberry-sized area from the center of a kiwi slice.
- Place the kiwi slice into the bowl, on top of the blueberry so the blueberry fits into the hole that you created. This will be the iris of your eyeball!
- Add just enough water into the bowl to cover the blueberry and kiwi, no more than a half-inch deep.
- Freeze for one hour, or until ice is set.
- Fill with water and freeze overnight. The reason why you need to freeze the ice cubes in stages is to prevent the fruit from floating to the top!
- Unmold the ice cubes when you are ready to serve the punch
Make the punch:
-Pour ginger ale and cranberry juice into a punch bowl. Top with scoops of sherbet.
-Add eyeball ice cubes.
-Ladle the punch into glasses, adding a small scoop of sherbet to each glass if desired.
