Blackberry Parfaits

    • 1 cup heavy cream
    • 1/4 cup powdered sugar
    • 1 cup fresh blackberries, plus extra for garnish
    • 1 cup vanilla yogurt
    • 4 (full-sized) chocolate graham crackers crushed

-Pour the heavy cream into the bowl of your mixer. Using the whisk attachment, whip on

high speed until somewhat thickened (about 1 minute).

-Add the powdered sugar and whip on high speed until stiff peaks form (about 1 minute).

-Remove the whipped cream to another bowl.

-Add the yogurt and berries into the bowl of your mixer. Whip on high speed with the

whisk attachment, until the berries have completely mixed into the yogurt and it is a

lovely shade of purple.

-Add approximately 2/3 of the whipped cream back into the mixer and whisk on a slow

speed until combined (scrape down sides of bowl as necessary).

-Fill parfait glasses with blackberry mixture until about 3/4 of the way full.

-Sprinkle with a couple of tablespoons of graham crumbs.

-Carefully top with a spoonful of the remaining whipped cream. Add a blackberry on top.

-Refrigerate if not serving immediately.
