Loaded Leftover Mashed Potatoes
No measuring needed...use leftover mashed potatoes and your favorite toppings!
Ingredients:
- leftover mashed potatoes
- melted butter, for greasing ramekins
- toppings: crispy, crumbled pancetta; shredded cheddar; crispy French-fried onions
snipped chives and sour cream, if desired
- Preheat your oven to 375 degrees Fahrenheit.
- Brush ramekins or oven-safe individual serving bowls with melted butter. Place onto a baking sheet.
- Fill ramekins with mashed potatoes. Bake for 20 minutes.
- Top with shredded cheese and pancetta. Increase oven temperature to 400 degrees and bake for an additional 5 minutes, until cheese is melted.
- Sprinkle with additional toppings (crispy onions, snipped chives) and serve immediately, with sour cream (if desired).
