S'mores Ice Cream

Ice cream base:

    • 2 cups heavy cream
    • 1 cup whole milk
    • 2/3 cup sugar
    • 1 teaspoon salt
    • 1 teaspoon vanilla extract

Add-ins:

    • 5 (full-size) crumbled graham crackers (crumble into 1/2-inch pieces)
    • 1 cup toasted mini-marshmallows

Garnish: chocolate syrup

    1. Add heavy cream, whole milk, sugar, salt and vanilla extract into ice cream maker and freeze according to manufacturer's directions.
    2. While the ice cream is churning, toast the mini-marshmallows. Preheat your oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper. Arrange the marshmallows on the parchment, taking care that they are spaced apart (they will puff in the oven and if they are all together you will end up with one large clump). Place into your oven for 2 minutes, until they are just starting to turn brown. Allow to cool (may also be done ahead of time. The important thing is that the marshmallows be completely cooled before adding into your ice cream).
    3. After ice cream has been prepared, stir in the crumbled graham crackers and toasted marshmallows. Spoon the mixture into a freezer-safe container and place into your freezer to harden.
    4. Drizzle with chocolate syrup when serving.
